Vegetable Frittata Recipe

This fritatta recipe goes great with Inn at Mitchell home fries and toast.

Ingredients for Vegetable Frittata

  • ½ large bag of chopped frozen broccoli
  • 8-10 sliced mushrooms
  • 2 cups shredded sharp cheddar
  • 8 eggs
  • ½ cup mayonnaise
  • Seasoned salt and pepper to taste

Spray a glass deep-dish pie pan with non-stick spray. Add broccoli, then mushroom, then cheese. Mix eggs, mayo and S&P and pour over veggies. Cover with foil and refrigerate over night. Place in cold oven. Turn to 350 and bake covered a little over an hour until set. Serves 6-8

Note: Any combination of vegetables and cheese can be used and meat can also be added. You can also delineate the slices with a strip of red pepper or half a cherry tomatoes.
