These tradtional featherbed eggs are great for impressing someone special in the morning.
Ingredients for Featherbed Eggs
- 6 slices rye bread, crust removed
- About 2 cups fresh spinach leaves, torn
- 6-8 mushrooms, sliced
- 1/2 cup chopped ham, optional
- 2 cups shredded Swiss cheese
- 1 & 1/2 cups milk
- 6 eggs, beaten
- Salt and pepper to taste
Arrange bread slices in a single layer in a shallow baking dish sprayed with non-stick spray. Cover slices with spinach, mushrooms, ham and Swiss cheese. Combine milk and eggs and then pour over bread mixture. Cover with foil and refrigerate over night. Place dish in a cold oven, then turn to 350 degrees and bake for about an hour or until set.
