Chestertown Crab Quiche Recipe

This quiche recipe is a staple for guests' breakfasts at our Chestertown, B&B. The quiche goes great with our Mitchell House Home Fries and either bacon or sausage.

Ingredients for Crab Quiche Recipe

  • 1 piecrust, unbaked
  • 1/2 cup milk
  • 1/2 cup mayonnaise
  • 2 eggs
  • 3 TBL flour
  • 2 TBL Old Bay Seasoning
  • 1 large shallot, chopped
  • 1 TBL chopped parsley
  • 1tsp dry mustard
  • 2 TBL dry sherry
  • Dash of cayenne
  • 2 cups shredded swiss cheese
  • 1 pound fresh crab meat

 

Preheat oven to 350. Put crust into 9-inch deep-dish pie pan sprayed with nonstick pan coating. Mix together milk, mayo, eggs and flour. Stir in remaining ingredients. Add crab last by gently folding in. Pour into pie shell and bake about 1 hour until set. Yields 6-8 servings.
